Tuna processing line for canneries

The TACORE tuna processing line is a turnkey solution for tuna canneries covering the whole process: controlled thawing, cooking in static vacuum tuna precookers, cleaning on ergonomic tables, packing in cans or pouches, seaming, retort basket loading and sterilization. Every plant is custom-designed for the species, container format and capacity.

How the line works

  1. 1

    Controlled thawing

Frozen tuna is thawed in a controlled way so it reaches the cooker in homogeneous condition, supporting uniform cooking and better meat yield in the following stages.

  2. 2

    Vacuum precooking

Fish is cooked in static vacuum cookers with a self-contained vacuum group and hydraulic door closing, taking trolleys of up to 700 kg and precisely controlling every stage of vacuum cooking and cooling.

  3. 3

    Loining and cleaning

Cooked tuna travels along continuous multi-tier sanitary tables where operators separate clean loins, recover flakes and remove skin, bones and waste at comfortable ergonomic workstations.

  4. 4

    Packing and dosing

Loins and flakes are packed in cans or pouches and covering liquid, such as oil, brine or sauce, is dosed before the container is hermetically sealed.

  5. 5

    Can washing

Sealed cans pass through a can washer that removes oil and product residue from the outside, with recirculation and active recovery of the detergent solution.

  6. 6

    Basket loading and retort sterilization

Containers are loaded into baskets by mechanical systems or articulated robots and sterilized in steam or overpressure water spray retorts, with customizable recipes and F0 value calculation.

  7. 7

    Unloading and tooling washing

After basket unloading, cans move to the end of line, while crates, racks and cooking trays are washed and degreased in a continuous tunnel and returned clean to the process.

Line advantages

  • Static vacuum tuna precookers that preserve the weight and texture of the fish.
  • Homogeneous vacuum cooking that helps preserve tuna weight and texture.
  • Ergonomic cleaning tables separating loins, flakes and bones.
  • Mechanical or robotic basket loading to feed the retorts.
  • Cooking and sterilization traceability with recording independent of the PLC.

Species and formats

Suitable for tuna, bonito and other tunas canned in brine, oil or sauce, as solid loins, chunks or flakes. The line handles round and oval tinplate or aluminium cans, large formats such as RO-1000, glass jars and pouches, with retorts able to sterilize metal containers, glass and retort pouches.

Frequently asked questions

What capacity can a TACORE tuna line reach?

+

Capacity is sized for each project according to product, container format and number of workstations. Our engineering team calculates the configuration of cookers, cleaning tables and packing required for your plant target output.

Why precook tuna in a static vacuum cooker?

+

Vacuum cooking provides homogeneous heat distribution throughout the trolley and precise control of cooking and cooling, which helps preserve fish weight and texture and keeps steam and water consumption optimized throughout the cycle.

Can retort basket loading be robotized?

+

Yes. TACORE supplies basket loading and unloading cells with articulated robots and magnetic or vacuum heads. The number of lines served by each cell is defined by the production rate and the number of retorts.
