Consumption and production for theoretical and variable values are detailed in this example depending on the steaming time and type of recipe and on the product to boil (tunas or pelagic fish).

PROCESS DESCRIPTION

  • Automatic door opening and introduction of carriages with frozen or unfrozen products.
  • Initial vacuum before introducing steam to avoid oxidation.
  • When the chamber programmed temperature is reached, the steaming process starts and its duration will be determined by the product internal temperature or selected time.
  • The software manages the information received from the 8 product probes and from the 4 PT-100 placed in the chamber for homogeneous steaming.
  • When the process finishes, dual cooling through water showers is carried out:
    • Inside: Natural vacuum, that is brought to the limit with the start into operation of the vacuum unit, is created, avoiding the product oxidation and increasing its performance.
    • Outside: As there is no lining in the ferrule, cooling of the chamber is faster.
  • The whole process is managed by an own-developed software, which is totally parametrizable, that can be automatically adapted to different types and sizes of products.

THERMAL PROCESS CONTROL (MULTIPROCESSOR)

  • Data acquisition, automatic processing, thermal process control, report and statistics generation, parametric graphs, process monitoring in real time.
  • File with 120 recipes that are parametrizable by the customer for different thermal processes adapted to different products, tunas, pelagic fish, cephalopods, etc. and to different thermal processes such as steaming, defrosting, etc.
  • Integration of up to 8 machines in the same control system for fast man-machine communication.
  • Tripled safety: Three independent protection systems provide this machine with a completely safe work, even with low maintenance.
  • Simultaneous video record independent of the computer that ensures production traceability and further statistics, meeting standard FDA-CFR21.
  • Our software allows for higher and more precise control of steaming parameters, with the subsequent increase in the average performance of the product.
  • More steaming stages that facilitate detailed thermal control and optimum steaming/humidity balance of the final product.
